Are you a donut, or a muffin?

Remember that old commercial for EasySpirit pumps.. where the women were playing basetball in them, and the woman was singing “Looks like a pump, feels like a sneakerrrr..”? Well if you do, then great, you can follow where I’m going with this. If you don’t, well then I just told you… so try and keep up. Google it if you must.

These are donut muffins. So therefore, I compare them to EasySpirit pumps- they look like a muffin, taste like a donut. I was even mentally singing that jingle while I was making them. As soon as I saw them on Bake & Destroy I made a mental note to make them ASAP. I could only imagine how they’d be, cinnamon sugar donuts are my favorite. And these donut muffin hybrids are, in no uncertain terms, ah-maze-ing. Now for some strange reason she got 12 but I got 10. God only knows what the hell I did wrong. I even made 2 batches, and each batch had 10! So anyway… here’s her recipe for donut muffins.

DONUT MUFFINS

Ingredients:

  • 1/3 cup oil
  • 1/2 cup sugar
  • 1 egg
  • 1-1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk

Cinnamon Sugar topping:

  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoons cinnamon

Directions:


Preheat the oven to 350 degrees. Grease a muffin pan, don’t use paper liners because you’re going to want to dump these out hot and get started coating them in sugar.
Then, cream the oil, 1/2 cup sugar, and egg in a medium bowl. In a small bowl, mix the flour, baking powder, salt and nutmeg together. Alternate adding the flour mixture and the milk to the creamed mixture, making three additions of flour mix and two of milk. Spoon the batter into the greased muffin tin, about 1/2 full and bake for 20 minutes. Immediately remove muffins from pan when done and roll (or dip) in melted butter, then roll in cinnamon and sugar.

So make these and enjoy them, and have a Happy New Year. They are indeed best warm, but I’ll eat them anywhichway.

  1. YES! Doughnut muffins rule! Even through the slight pixellation they look amazingly delicious…but then again, they’re doughnut muffins, how could they not be? Doughnut muffin. Sorry, just had to say it one more time.

    YES INDEED.. doughnut muffins are one of the best things I’ve ever discovered. They went over really big around here. So big I made three more batches and now that those are done everyone keeps saying, “Where are the donut muffins? You’re not making anymore?” At this rate I’ll have to make a batch every other day!

You then can listen to a playlist created based on an amalgamation of what all your friends are listening to, which is also enjoyable. Those concerned with privacy will be relieved to know you can prevent the public from seeing your personal listening habits if you so choose.

  14. I think that what you published was actually very reasonable.
    But, what about this? suppose you composed a catchier post title?
    I ain’t saying your content isn’t good., however what if you added a post title
    that makes people desire more? I mean CUPCAKE REHAB | est.
    2007 is kinda vanilla. You could look at
    Yahoo’s front page and note how they create post headlines to grab viewers to open the links.
    You might try adding a video or a picture
    or two to grab readers interested about everything’ve got to say.
    In my opinion, it might make your blog a little bit more interesting.
