Mint is Christmas-y


So for my Christmas menu, in addition to turkey & stuffing (which I’m not hugely into but was requested by the older family members), I’m making homemade lasagna. I do eat turkey, just not a lot. Jay doesn’t eat it at all, so therefore I required a dish I knew he would eat. I always make stuffed shells on holidays, so I figured I’d make lasagna instead this time. In addition, baking-wise, I have a “dessert menu” of chocolate-mint cupcakes and french toast cupcakes with cream cheese frosting (that I found here). I had to space out my baking/cooking seeing as how I don’t have a whole lot of room in the kitchen, and also being that I’m making SO MUCH I can’t do it all the day before or day of. So… I started tonight.

In case you’re confused- the cupcakes are chocolate, the frosting is mint. I topped them each with a starlight mint and a vintage postcard topper I made. Now, yet again my picky boyfriend doesn’t like chocolate mint (I know- hes CRAZY!) so the french toast cupcakes are mainly for him. Hes gonna have to fight for them though, I can see it now. I used my favorite chocolate cupcake recipe and I pretty much just flew by the seat of my pants with the mint frosting. I used a basic buttercream frosting recipe and added peppermint extract to taste. Its not overly mint, its more vanilla-mint. Then I just tinted it with red food coloring, piped it out, and swirled more red on top. The liners are red, but you really can’t see in those pictures. The other ones will have green liners. I’m so co-ordinated.

Tomorrow, expect pictures of the french toast cupcakes. Monday, I’ll post lasagna pictures. And Tuesday… well, Tuesday is Christmas day so I’ll be eating all the things I posted pictures of and opening my many (hopefully, LOL) gifts.
