Wishing for Spring vanilla mint cupcakes.

These cupcakes look like spring personified. Its so damn cold here I’m seriously wishing for some spring. Its like, 17 degrees right now here in NY! It absolutely sucks. So I’m longing for April showers and May flowers and warmer weather. I wanna wear rain boots instead of snow boots.

I was going to make pink lemonade cupcakes but forgot to buy the pink lemonade. Woops. So I went for vanilla mint instead.

I think vanilla mint is way underrated. Most people do chocolate mint, which is great. But vanilla mint is a great combination, that isn’t as heavy as the chocolate mint.

Theres really no recipe for these. I just used a vanilla cupcake recipe, and a vanilla-mint frosting recipe, which is pretty much me making vanilla buttercream and adding mint extract. Both frostings are mint, but the green one is more subtle than the pink.

I will do the pink lemonade cupcakes at some point. I might wait until actual lemonade weather; i.e. when its warm. Next on my list are either coconut cupcakes or root beer. I’m actually dying to try the root beer cupcakes but for the life of me I cannot find root beer extract. Maybe I haven’t looked hard enough? Tell me where I can find this elusive extract, please.

    You can also buy cola and cream soda extracts there which come in very handy.

    How to eat a cupcake: I actually googled cupcakes and found it on an .edu website, if I’m not mistaken. it was a huge image, like 1035 pixels widthwise by however many high. I just love the little reindeer :) There was no name or credit attached to it however.
