Peanut butter birthday pie.

For three people in my life, I have a rule. Only three people. The rule is: on your birthday, you get to pick one baked good- anything you want- and I will make it for you and you get the entire thing to yourself. You won’t be asked to share it. You can do with it whatever you want. Eat it all by yourself while watching TV, share it, bring some to work, smear it on your face and run around town naked, etc.

Okay maybe not so much that last one… Anyway

So, only THREE people get this privilege- there were four, but my Nana passed away almost 4 years ago. Today actually would’ve been her 97th birthday, and she would get whatever she wanted. But that happened regardless of what day it was, let’s be honest. Anyway, there are three people in the entire world who have this privilege and two of them (my parents) get it for an extra day each: Mother’s Day/Father’s Day as well as their birthdays. The third person is Jason.

But sometimes… even if they pick something on their own, I see a recipe that just screams their name. So they get two things.

Jay has picked a variety of things over the years, sometimes cupcakes. Sometimes cookies. Sometimes pie. This year, he chose cheddar dill scones (I know, random). Which was fine by me. However I also had another trick up my sleeve: peanut butter pie. And since its not quite his birthday yet- it’s actually this Saturday, the 23rd- I could make more than one thing easily.

I saw this pie and it pretty much jumped off the page and into my face yelling “JASON!” Seriously. If you knew how much Jay loves peanut butter, you’d understand. And the toppings on this pie looked good, but I had other ideas. Such as:

Crumbled chocolate chocolate chip cookies, peanut butter chips, and pretzels. Mmm hmm. I had these in mind and then I asked him what he’d prefer and he confirmed. How good does it sound, in your mind? Pretty damn good, right??

And it’s an insanely easy pie to make. All you have to do is bake the crust. The pie itself just chills in the fridge for a few hours, and then voila! Done.

It practically makes itself. Well, no. You actually have to make it. It isn’t that easy. And yes, I am the worst at pie crust. So, if you’re absolutely shit at it yourself, then you can use a frozen pie crust. No need to make your own for a pie this simple.

PEANUT BUTTER PIE (adapted from Real Simple)

Ingredients:

  • 1 1/2 cups heavy cream
  • 1 cup marshmallow cream
  • 1 cup creamy peanut butter
  • 1/4 cup peanut butter chips
  • 1/4 cup broken up pretzels (or mini pretzels)
  • 1/4 cup crumbled chocolate cookies
  • 9-inch piecrust, prebaked

Directions:

  1. Bake crust and let cool completely.
  2. Using an electric mixer, beat heavy cream until soft peaks form. Beat in marshmallow cream and creamy peanut butter.
  3. Spread mixture into the pie crust and top with peanut chips and chocolate cookies. Chill until firm, 4 to 5 hours.

Other topping/crust ideas include (but are not limited to):

  • Salted peanuts
  • a chocolate pie crust
  • a chocolate cookie crust
  • a pretzel crust
  • a couple of smears of jelly underneath the filling, on top of the crust (after baking) for a PB&J pie
  • a smear of melted chocolate on top of the pie crust, under the filling (same as above)
  • mini-marshmallows
  • bacon crumbled on top
  • maple of some kind, incorporated somehow

Basically, if you can dream it, you can do it.
