Nest Eggs.

When it comes to Easter, I’m more into the bunnies and chicks and pretty eggs aspect than anything else. I really like this time of year, because it means spring is coming and signals the end of winter, but less sappy than that- my favorite candy of all time comes out JUST for this time of year: the Cadbury Creme Egg. *sighs wistfully* Me and Creme Eggs have been together a long time, I just can’t shake ’em. Its true, they’ve started coming out at Christmas too, under the name “Ornament Creme Egg”… and this makes me very happy. As does this interview with the infamous Creme Egg by CakeSpy.

Buy me a Creme Egg and I’ll love you forever.

To avoid embarrassing myself by attempting a Creme Egg Cupcake (which I could forsee would spell certain death.. or at least disaster… okay probably just a mess), I opted to keep it simple.

I thought I’d do some “plain” cupcakes and focus more on decoration. I chose a vanilla-lemon cupcake recipe, with vanilla frosting. I decided to make little nests on top, complete with eggs in them. Of course, Creme Eggs are too big to use but luckily my friends at Cadbury also make Mini-Eggs, which are my second favorite Easter-time candy. These little speckly chocolatey eggs of the Gods are perfect for my mini-cupcake-nests.

First I made the cupcakes (recipe here) and the frosting (plain vanilla). Then I toasted some coconut to make the “nests.” Then, as if this isn’t painfully obvious, I put the mini eggs on top.

As far as toasting coconut.. its really easy;

  1. Just buy a bag of shredded (or flake) coconut.
    Spread it on a baking sheet and bake in an oven thats been preheated to 350 degrees F.
  2. Keep an eye on it, stirring every 30 seconds until its mostly a toasty color (light brown), which usually takes anywhere from 2-5 minutes.
  3. Then its done! Take it out, let it cool, and use it.

After it cooled, I placed mounds of it on top of the cupcakes, then pushed the centers in to look like a nest. I took a few mini eggs and put them in the nests and thats it! Voila!

Be sure to let the coconut cool before putting it on the frosting because it WILL melt your frosting.

Again, I left three plain for Jay who… *drum roll* hates shredded coconut and probably hates toasted shredded coconut more. He’s so difficult! 😉

    The boys and I made similiar ones but we dyed the coconut green to make it grass and used jelly beans. I saw the recipe in a magazine and the boys loved them!

  9. The new Zune browser is surprisingly good, but not as good as the iPod’s. It works well, but isn’t as fast as Safari, and has a clunkier interface. If you occasionally plan on using the web browser that’s not an issue, but if you’re planning to browse the web alot from your PMP then the iPod’s larger screen and better browser may be important.
