What can I say? I bake to comfort people, to make them happy, to help cure illness (of course, the AMA wouldn’t agree with that one, but I think baked goods can have the same healing effect chicken soup supposedly does) and to thank them. I refuse to make a box dehydrated cake or cookie mix to give away to someone. I wouldn’t even make it for myself (although I have doctored up some mixes in the past- I don’t know if I’d do it again). Anyway for three or four days last week, Jay was working his ass off doing bathroom renovations for us, and it turned into a much bigger job than we could’ve anticipated, yet he did it without complaint and did an amazing job, while also using up 3-4 days of his vacation doing so. So while he went out with some friends on Friday, I baked him some french toast cupcakes. I could’ve made him some more fried pickles and he probably would’ve been over the moon, but I felt a baked good was more appropriate. He really wanted maple iced sugar cookies, he loves them and says they taste like pancakes… but it was so hot and humid that the dough never would’ve been workable, it would have just been mush. So what’s the next best thing? How about cupcakes that taste like french toast (or pancakes)? The first time I made them they went over so well that I had requests for them for months afterward. This time I made a maple icing to put on top before frosting them with cream cheese frosting that I colored yellow because it reminded me of breakfast for some reason- sunshine, eggs, etc. Hopefully they’re just as good as those cookies Jay loves. I keep saying I’m going to put crumbled bacon on top and never do… but I also say I’m going to make little eggs and bacon out of fondant to put on top and never do. I’m all talk.
