A refreshing spring & summer cocktail with lime simple syrup, vodka and seltzer.

As of last night, Mad Men is over. Forever. Adieu, Don Draper/Dick Whittman. Goodbye, Peggy Olson. Adios, Joan Harris. And Roger Sterling! Oh, how I’ll miss Roger & his antics. Now that this show is over, who are we to look to for suave yet incredibly sexist reminders of days gone by? Who else on TV will remind us not only how far we’ve come socially, but also remind us on a weekly basis that men (…and women) today dress like slobs? Who else will have us yearning for cocktails – and cigarettes- constantly?

I don’t know. All I do know is that I happen to love the idea of the “cocktail.” Especially this time of year. Open windows, sunshine, and a nice cool cocktail.

A simple simple syrup & vodka cocktail, with lemon and lime.

The best kinds of cocktails are the simple ones. The easy ones. I love a good Pimms Cup; but you need cucumber & a variety of things to make it properly. And I adore Old Fashioned’s, but yeah, you need bitters, sugar cubes and fresh orange rind. Most cocktails require things that you might not have on hand- grenadine, bitters, even freakin’ maraschino cherries.

But this one doesn’t need any of that. Just seltzer (plain or flavored), vodka, some fresh citrus fruit (optional, really, but why not?) and that lime simple syrup recipe I posted back a few weeks ago. That’s all!

An easy cocktail made with three ingredients: lime simple syrup, seltzer, and vodka.

The amount of vodka depends on you. One shot glass full, two shot glasses full… totally up to you. I did one shot glass full of vodka, and two shot glasses full of the lime simple syrup. Add those to a glass full of seltzer & ice, add a lemon or lime slice or two, and stir.

Ta-da! A cocktail! Suitable for watching Mad Men re-runs or hanging out by the pool.

And you can totally substitute a lemon simple syrup or blood orange simple syrup whatever you please. And you can use a flavored vodka as well as a flavored seltzer, if you want layers of flavors. I like to keep it simple. Get it? Simple. All you have to do is make up some simple syrup flavored with citrus fruits; and the byproduct of that is … you’ll have delicious candied fruit slices!

CANDIED LIMES & LIME SIMPLE SYRUP 

Ingredients:

  • 1 large lime or two small limes, sliced into thin rounds (my rounds are always uneven- a good knife doesn’t help lack of skill) OR any citrus fruits cut into rounds
  • 1 1/2 cups sugar
  • 1 1/2 cups water

Directions:

  1. In a medium saucepan, stir the sugar into the water and bring to a simmer, stirring occasionally until the sugar dissolves.
  2. When the liquid is clear and beginning to bubble, drop the slices in carefully. A little overlapping is okay, and you can layer them if you need to. Just make sure they’re all mostly submerged. Bring the heat to medium low- do not boil!
  3. Let them simmer for 40 minutes or until translucent. Meanwhile, line a cookie sheet with parchment paper and place a wire rack over it. When the slices are ready, place them on the wire rack using tongs. Sprinkle with more sugar lightly. Let set for 6-8 hours or until mostly firm.
  4. Slices can be stored in the syrup for up to a week in the fridge, or, if completely dried and sugared, will keep in an airtight closed container for the same amount of time. The syrup itself can be stored in a jar in the fridge for up to two weeks.
